What are they and what will they do for me?

Microgreens were introduced back in the 1990's and used by chefs at high-end restaurants to add an artistic element to their dish presentations. Today, microgreens are used across the world by chefs to enhance their dishes. As more and more people are exposed to these delicious treasures, opportunities are there to enjoy in your home their delicious flavors and visual additions to your meals with the added benefit of their amazing concentrated nutrition.

Description ~ Red Acre Cabbage microgreens are very small in size, averaging 5-7 centimeters in length, and have broad, flat, and heart-shaped leaves attached to thin, pliable stems. The dark green leaves are smooth and have even, rounded edges that are lined with a deep purple hue. There are also dark purple, central veins that connect to the royal purple stem.


Taste ~ crisp and tender with a fresh, green, and earthy, peppery flavor.



Nutrition

Red Acre Cabbage microgreens have 69 times more Vitamin K, 40 times more Vitamin E and 6 times more Vitamin C than mature red cabbage which can boost your immune system and help to prevent diseases. In addition to Vitamin E and C, they are also high in Vitamin K, potassium, beta-carotene, calcium, magnesium, antioxidants, and amino acids that are extremely important for skin, eyes and fighting cancer. Animal studies have shown that they may also reduce weight gain, lower bad LDL cholesterol and cut triglycerides.


A Special Note of Precaution ~

Microgreens are generally considered to be extremely safe for most everyone. They do contain very high concentrations of nutrients which is why this form of food is considered a nutritional supplement. We should keep in mind that because of it's high concentration of Vitamin K in particular, consuming large amounts of cabbage microgreens may create potential interaction with certain types of prescription medications known as anti-coagulants.


Vitamin K (known to naturally help with the process of blood clotting) may interfere with blood thinning medications. If you are taking warfarin or another blood thinning medication, it’s important to maintain a consistent intake of Vitamin K. If you’re consuming large amounts of red acre cabbage on a regular basis, you should discuss it with your medical professional in case you need to have your medication dosage adjusted.


Culinary ~ Red Acre Cabbage microgreens are i used by chefs to create an elevated dining experience utilizing the texture, peppery flavor, and unique shape of the leaves. They are best suited for raw applications as their delicate nature cannot withstand high heat preparations and heavy dressings. They should be added as a finishing element to dishes and can be sprinkled over soups, salads, stews, grilled vegetables, and meat dishes. Micro Red Cabbage pairs well with citrus, nuts, garlic, shelling beans, mushrooms, ginger, fennel, shallots, apples, avocados, farro, quinoa, meats such as chicken, beef, and sausage, eggs, cheeses, and light-bodied vinegar.



Microgreens will keep for about a week when stored unwashed, in a sealed container, and in the refrigerator. They're not hard to grow for yourself, but are a delicate crop that needs close monitoring and tending. Support your local farmer! If someone in your area is growing them, contact them directly.
